Well my eventual workaround was quite longwinded but is working well.
I installed the printer via USB to a spare PC and shared it over the network. I then installed O'Print which turned it into an Airprint compatible printer, so it works with iOS etc.
Finally, I set up the scan-to-computer feature and made these scans go directly to my DropBox. Then any PC on my LAN that needs to see the scans just syncs/subscribes to the appropriate folder on my Dropbox.
It's worked flawlessly and nothing has needed a reboot.
I believe the wireless functionality on this printer is poor though, and having read numerous similar issues I think HP should acknowledge or fix it so that things work more satisfactorily.
